Cheesy Cauliflower Bake

A fantastic yet simple dish that will vey quickly become a favourite with family & friends!!
- 1 medium sized Cauliflower
- 150gms Butter
- 1 1/2 cups Wholemeal Spelt Flour
- 1 1/2 cups of finely grated cheese (I normally use cheddar or tasty, but there are many other rennet free cheeses that work well!)
- Oat milk or soy milk - approx 4-500mls
- Carefully remove any leaves from the cauliflower and rinse well. Place the whole head of Cauliflower into a large saucepan half filled with filtered water. bring to the boil then simmer for 15 minutes with the lid on.
- In a separate saucepan melt the butter and once fully melted sift around half the flour into this same saucepan. Mix with a wooden spoon and slowly sift the remaining flour into the pan, until the flour is all mixed in.
- Once the sauce reaches a smooth consistency, start adding the oat or soy milk.  This may take you 10 minutes to pour into the saucepan, and it does need to done slowly, although you need to stir very quickly. 
-Then add the finely grated cheese.  Again, it is best to add small amounts of cheese at a time and allow it to melt gradually. 
- You will need a baking dish large enough to fit the whole cauliflower head. Place the whole cauliflower into the baking dish and pour all the sauce over the cauliflower. Place the baking dish uncovered into a hot oven pre-heated to 200oC until the top goes golden brown (usually 10-15 minutes but be sure to keep an eye on it).
- Serve directly in the baking dish with some cracked pepper and finely chopped parsley sprinkled over the top.
