Preparation Time – Approx 15 minutes


125gms Butter
½ cup Loving Earth Agave Syrup
1 teaspoon of Vanilla Essence
1 Organic Egg
2 ripe Bananas mashed
1 ½ cups Spelt Flour
1 ½ tsps Baking Powder
¼ cup Soy or Oat Milk


1. Melt the butter, agave and vanilla in a medium sized saucepan.
2. Remove from heat.
3. Add mashed bananas and stir through until just blended.
4. Add egg and mix in well.  Stir in spelt flour, and baking powder, add milk and mix lightly
5. Bake at 170 degrees for approximately 40 minutes

I made this agave banana cake this morning and adapted it from other recipes which use sugar, cow's milk and wheat flour.  Spelt contains low gluten, however if you have a gluten intolerance, you can substitute the spelt with buckwheat flour.  (No gluten)  This recipe is quick to make and a great snack if you fancy something sweet whilst on detox program, or any time really...
Very delicious, especially if you eat it warm, straight from the oven!
